I have been making lots of granola bars lately. When I'm in a hurry, granola bars are so much quicker than cookies.We've been experimenting with different add-ins. That's the great thing about these bars. Just use up what you have.
1 cup rolled oats
1/2 cup oat flour (I grind the oats in a small food processor)
1/2 cup brown sugar, firmly packed
1/4 t. baking soda
1/4 t. baking powder
1 t. cinnamon
1/2 t. salt
1/3 cup honey
Optional add-ins (to total one cup):
coconut
chocolate chips (Enjoy Life)
chopped nuts
dried fruit
Combine oats, flour, brown sugar, baking soda, baking powder, cinnamon and salt in a bowl and mix. Add honey and mix well. Add any "add-ins" at this point.
Press the mix evenly into a 8" x 8" pan. Bake at 325 degrees for 18 to 20 minutes. Cool completely before cutting.
