I'll admit that you can barely call this a recipe. But I was so excited about how this turned out that I just had to share.
Using Jell-O Cook & Serve chocolate pudding, combine pudding mix with 2 cups of So Delicious Coconut Milk Beverage in a saucepan. Using medium heat, bring to a full boil, stirring constantly.
I let the pudding cool, then layered with fresh raspberries, as shown.
Super simple. Super delicious. Gluten free, casein free, and soy free.
A million thanks to Heidi @ Adventures of a Gluten Free Mom for this idea. If you are a little more adventurous, she has an amazing recipe for GFCFSF chocolate pudding from scratch.

That looks so yummy, and it's great to have a simple treat recipe to rely on. Thanks for participating in Gluten-Free Wednesdays. Please add a link back in your post. :)
ReplyDeleteI also got this tip to use cook and serve Jello pudding with coconut milk from Heidi's blog.
ReplyDeleteJust thought I would share that I tested this recipe using almond milk in place of coconut milk and it worked perfectly.
It's always nice to have options! :)
