GFCF "Rice Crispy" Treats

Traditional Rice Krispies treats are a family favorite. Here's my gluten-free casein-free version. It's just as good and every bit as easy as the original recipe.


3 Tablespoons Organic Palm Oil (I use Spectrum Organic All-Vegetable Shortening)

10 oz. package of regular marshmallows or 4 cups of miniature marshmallows

6 cups of gluten-free rice cereal (I use Erewhon Crispy Brown Rice Cereal)


Melt palm oil in a large saucepan over low heat. Add marshmallows and stir until completely melted. Remove from heat.

Add crispy rice cereal and stir until well-coated.

Press mixture evently into a 9" x 13" pan coated with coconut oil. When cool, cut into squares.
